Kids' Favorite Cookies: Snickerdoodles

There's something about Autumn that makes me crave cinnamon, and these snickerdoodle cookies are just perfect for this time of year!






This recipe makes chewy and delicious snickerdoodle cookies that kids love. One girl told me that she usually didn't like snickerdoodle cookies, but she loved these. I may not know how to make dinner, but boy am I good at cookies. My husband teases me because I always have supplies on hand to make 10 different kinds of cookies but when it comes to making dinner I always have to run to the store for ingredients. Or we eat cold cereal and pancakes. Which I'm fine with. And we had last night.




Snickerdoodles:

1/2 cup shortening
1/2 cup butter
1 1/2 cups sugar
2 eggs

2 3/4 cups flour
1 tsp. cream of tartar
1 tsp. baking soda
1/4 tsp. salt

Heat oven to 400 degrees. Cream shortening, butter, sugar and eggs thoroughly. Stir in dry ingredients. Roll dough into balls the size of small walnuts (or use a cookie scoop, which is what I do). Roll in mixture of 2 Tablespoons sugar and 2 teaspoons cinnamon. Place on parchment paper lined cookie sheet. Bake 8 to 10 minutes. (These cookies puff up at first, then flatten out.)
